Recipe: Raw Caesar Salad Dressing
Here's another raw vegan favourite of ours. It has lots of flavour without egg or dairy. And it's raw and simple to make - throw all the ingredients in the food processor and blend until smooth. You don't even have to soak the cashews first (although you can if you want a creamier consistency). The salty and fishiness comes from kelp granules. You can find them in a heath food store (I found mine at Famous Foods on Kingsway in Vancouver) or at Whole Foods. The dressing lasts in the fridge for a couple days, just add some water and stir (the cashews will soak up the liquid when it sits in the fridge).
Combine all ingredients in a food processor.
Puree until smooth and well combined.
Toss with chopped romaine (or other green, I have also used kale), and enjoy!
Raw Caesar Salad Dressing
Makes 2 servings
1/2c raw cashews
1/4c water
1/4c olive oil
3 tbsp lemon juice
2 tbsp red wine vinegar
3 garlic cloves
3 tbsp kelp granules
1 tsp miso paste
1 tsp dijon mustard
fresh black pepper, to taste
1 large head of romaine lettuce, shredded
Combine cashews, water, olive oil, lemon juice, red wine vinegar, garlic, kelp granules, miso and dijon mustard in food processor. Puree. Add fresh black pepper. Toss with romaine lettuce and serve. Pin It Now!
