This salad is packed goodness - red quinoa, kale, cabbage. The dressing is creamy and satisfying. Enjoy on its on or as a side dish.
Rainbow Quinoa Salad with Lemon Tahini Dressing
Serves 2
1/2 cup red quinoa, cooked and cooled
2 leaves of kale, washed and torn into small pieces
1/2 red bell pepper, cut into 1/4 inch dice
1/4 c red cabbage, shredded
2 tbsp red onion, minced
Lemon Tahini Dressing
2 tbsp hemp seeds
In a large bowl, combine quinoa, kale, red pepper, cabbage and onion. Toss with Lemon Tahini Dressing. Sprinkle hemp seeds on top.
Lemon Tahini Dressing
Serves 2
1/2 lemon, juiced
1 clove of garlic, finely minced
1/4 c grapeseed oil
2 tbsp tahini
pinch of salt
fresh black pepper to taste
Place all ingredients in a small jar. Secure the lid tightly. Shake thoroughly to mix. Pin It Now!
Would olive oil work as well or is it too heavy for the recipe?
ReplyDeleteI'm sure olive oil would work also. I use grapeseed to avoid the olivy-flavour of olive oil.
